Cauliflower in Curry Butter with Cashews

Ingredients:

- 1 head of cauliflower, trimmed into florets
- 2 to 4 tablespoons butter or canola oil
- 1.5 tsp curry powder
- 1 lime, juiced
- 1/4 cup raw cashews
- 3 Tbsp chopped cilantro
- Salt and pepper to taste

Directions:

-1- Steam cauliflower to desired tenderness.
-2- Place cashews into a hot pan (no oil) and toss until toasted, being careful not to burn.
-3- Set cashews aside.
-4- In the same pan, heat the butter or canola oil, curry, lime juice, and cilantro and stir well.
-5- Add steamed cauliflower, toss and garnish with cashews.
-6- Season with salt and pepper to taste.

Serving suggestions:

Great served over Basmati rice or potatoes (portion control, portion control :o)
Serving size should be: 1 small potato with 1 cup of this cauliflower dish or 1/2 cup cooked rice and 1 cup of this cauliflower dish.
