Sweet Sauteed Cherry Tomatoes

Ingredients:

- 1 Tbs extra-virgin olive oil
- 2 Pints cherry tomatoes, halved unless very small
- 1 Tsp honey (or to taste)
- 1 Medium clove garlic, minced
- 2 Tbsp basil leaves, sliced thin
- Salt and pepper to taste

Directions:

-1- Heat the oil in a large skillet over medium-high heat until almost smoking.
-2- Mix the tomatoes and honey in a medium bowl and add them to the hot oil (do not mix the tomatoes and honey ahead of time or you will draw out their juices).
-3- Cook for 1 minute, tossing frequently.
-4- Stir in the garlic and cook for 30 more seconds.
-5- Remove from heat, add the basil, and season with salt and pepper to taste.

Serving suggestions:

Serve with brown rice or quinoa or as a side dish to grilled chicken.
