Here is a nice way to get your RDA in folacin (=folic acid) and potassium. The typical American diet lacks these 2 critical nutrients.

Folacin is essential for the manufacture of genetic material as well as protein metabolism and red blood cell formation.
Potassium helps maintain regular fluid balance. Needed for nerve and muscle function.

Ingredients:

3 eggplants of medium size
2 garlic head
1/3 cup of olive oil
Optional: 5 anchovy filets (from a can, in olive oil)
Optional: mayonnaise or soyonnaise
1 lemon (juice)

Directions:

Poke holes in the eggplants using a fork
Cook them in the microwave on high for 8 mn
Cut them in half and scrape the pulp into a food processor
Add the lemon juice + anchovy filets + soyonnaise + 2 garlic heads
Mix.
