Basil Coconut Chicken

Chicken is a great source of lean proteins and should be part of a healthy diet.
Proteins are indispensable to build strong muscles.

Ingredients:

- 4 chicken breasts
- 1 can of low fat coconut milk
- 1 ginger root (or to taste)
- a dozen basil leaves
- 1 small chili pepper (optional)

Directions:

In a large pot, put coconut milk + chopped chili pepper + grated ginger. Cook on low/medium for 5 mn.

Cut chicken in small 1 inch pieces. Add chicken to coconut/ginger/chili mix.

Make sure the chicken is totally covered by coconut milk. If not, add some fat free chicken broth until chicken is totally covered by liquid.

Simmer for 10 mn. Mix every 2 mn.

When chicken is cooked, turn off the heat and add minced basil leaves before serving.
