Braised Cabbage

. Shiitake Mushrooms ("shii" is Japanese for oak and "take" means mushroom) are delicious! They have a meaty texture and four times the flavor of white button mushrooms.
. Shiitakes provide high levels of protein (18% by mass), potassium, niacin and B vitamins, calcium, magnesium and phosphorus. The mushroom has all essential amino acids.
. Shiitakes have natural antiviral and immunity-boosting properties and are used nutritionally to fight viruses, lower cholesterol and regulate blood pressure.
. Mushroom protein is also superior to many other vegetable proteins due to its essential amino acid content. The white cap mushroom ranks above all other vegetables, except beans and peas in this respect. Between 70-90 per cent of the vegetable protein present can be easily digested.
. Cabbage provides healthy fibers while turkey provides easily absorbable protein with a low level of saturated fat.

Ingredients:

- 1 cabbage
- 5 shitake mushrooms cut in 4 (can be replaced by crimini or regular white mushrooms)
- 1 garlic clove
- 250g ground turkey
- Soy sauce
- Margarine (non hydrogenated)

Directions:

-1- Shred cabbage thinly.
-2- Sauté cabbage in margarine for approx. 20 minutes on medium heat stirring it almost NON STOP (additional benefit : your arm will get some exercise!)
-3- Add shitake mushrooms…keep on low to medium heat and mix regularly while you are taking care of the next task…
-4- Grill turkey and crushed garlic in a separate skillet. When grilled, add 2 tbs of soy sauce. Mix and add right away to the simmering cabbage.
-5- Mix.
-6- Reduce heat to low.
-7- Add 2 Tbs of soy sauce. Mix.
-8- Let simmer for 20 minutes.
