Feta Olive Whole Wheat Pasta Salad
. This is an interesting mix providing the vast majority of the nutrients we need for a meal : proteins, complex carbohydrates, dark leafy greens, etc….. Whole grain pasta will bring much-needed vitamin B6, which is critical for the absorption of magnesium.
. Feta cheese will provide you with indispensable protein and calcium (did you know that 75% of adult Americans do not get their recommended daily amount of daily calcium (RDA)
Ingredients:
- 2 cups cooked and refrigerated or room temperature whole grain tortellini
- 10 pitted kalamata black olives, cut in half
- 10 (or to taste) basil leaves, rinsed, pat-dried and chopped
- 2 cups cubed feta cheese
- ½ cup olive oil
- 2 Tbs red wine vinegar
- salt and pepper to taste (keep in mind this dish already gets salt from the feta so make sure you taste before adding any salt!)
Directions:
-1- Mix all ingredients in a large salad bowl.
-2- Mix and enjoy right away.
-3- This is not a salad that can be kept for the following day as pasta will absorb the dressing and become mushy.
Serve 6.
