Goji Berry Wild Rice Salad

Ingredients:

Serves 6
Prep Time: 10 to 15 minutes

- 2 cups cooked wild rice
- 1 1/2 cups cooked dry-packaged kidney beans, rinsed & drained
- 1 1/2 cups cooked dry-packaged black beans or pinto beans, rinsed & drained
- 1/2 cup Himalania Goji Berries
- salt and pepper to taste
- 1/2 cup coarsely chopped toasted pecan or walnut halves (optional)
- 6 cups spinach leaves

Vinaigrette Dressing:

- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp finely chopped shallots or red onion
- 2 tbsp honey
- 2 tbsp orange or pineapple juice
- 1 tbsp chopped parsley

Directions:

Whisk together dressing ingredients. (If prepared in advance, refrigerate until serving time and mix again before using.)
Combine rice, beans, and goji berries; drizzle desired amount of vinaigrette dressing and toss. Season to taste with salt and pepper. Spoon salad onto spinach-lined plates and sprinkle with toasted nuts, if desired.
