Guacamole
Avocados are a great source of
heart-healthy monounsaturated fats.
AND a recent
study revealed that the fats in avocados actually
contribute to the absorption of carotenoids
(antioxidants found in bright red, orange and yellow
veggies). So, having higher levels of these
carotenoids in your body may actually help decrease
your risk of heart disease and some cancers.
So don't be shy! Enjoy your guacamole (but keep your portions under control :o)
Ingredients:
Serves 4
2 ripe avocados
1/2 onion
1/2 tomato
10 leaves of cilantro (also called coriander)
1 lime (juice)
Directions:
Scoop out avocados into a large bowl and mash with a fork.
Add thinly sliced onions as well as tomatoes (just the meat, no grain or juice)
Thinly cut cilantro leaves and add to mix.
Add lime juice, mix once more and keep chilled until served.

Can be eaten with low-carb tortillas, as a spread in a sandwich or as a condiment for grilled chicken.
