Kale with Apple and Leeks
A Spring favorite tasty and healthy dish. Vey easy!Ingredients:
- 1 apple
- 2 Tbs olive oil
- 1 Leek, cut into 1/2 inch rings
- 1/4 teaspoon curry powder
- 1 head of kale, tough stems and ribs removed, leaves coarsely chopped
- 1/2 cup water
Directions:
-1- Peel, quarter, and core apple, then cut into 1/4-inch-thick wedges.
-2- Heat oil in a 5-quart pot over moderately high heat until hot but not smoking, then saute leeks, stirring
occasionally, until golden.
-3- Add apple and curry powder and saute, stirring, until apple is almost tender, about 2 minutes.
-4- Add kale and water and cook, covered, stirring occasionally, until kale is tender and most of liquid is
evaporated, about 5 minutes.
-5- Season with salt.
Serving suggestions:
Can be served as a side dish with meat, tofu or brown rice.
