Soyannaise - Fake Mayonnaise
Here is a great way to enjoy the taste of mayonnaise without the saturated fat usually found in the "real" stuff!Of course you can also adapt it to the recipes for which you are using soyannaise and add cumin or paprika to it.
Preparation time: less than 10 mins
Cooking time: less than 10 mins
Ingredients:
125ml or 1 cup sweetened soy milk (yes sweetened, I know it sounds strange but it is what we need here!)
Salt to taste – but avoid too much salt as it is not good for you
100ml/3½fl oz sunflower oil or if you don’t find it, canola oil will work
1 teaspoon white wine vinegar
1 garlic clove, crushed (optional but it adds a cool taste and it is good for your cholesterol J)
1 tbsp Dijon mustard
25ml/1fl oz flax oil (if you cannot find this, add a little bit more canola oil)
Directions:
1. Put the soy milk and salt in a saucepan and heat until hot, but not boiling.
2. Whisk the milk with an electric mixer or hand-held blender (preferred way to burn more calories) and add the oil and vinegar while whisking.
3. Keep up the whisking work and add the crushed garlic, the mustard and flax oil.
Serving suggestions:
Refrigerate for 1 hour before using (it will become firmer).
You can keep in the fridge for up to one week. Voila!
