Sun Dried Tomato Beef Stew
Ingredients:
- 2 Pounds boneless lean beef chuck, cut in 1 inch chuncks
- 1.5 Cups (12 oz) salsa
- 1 Cup julienne cut sun dried tomatoes, drained
- 1 15oz can black beans, drained and rinsed
- 1 15oz can corn, undrained
- 1/2 Cup water
- 3 Tbsp flour
- Cooked brown rice
Directions:
-1- Brown meat in oven proof skillet over high heat.
-2- Add salsa, tomatoes, beans and corn.
-3- Whisk together water and flour; stir into mixture in pan
-4- Cover with tight-fitting lid or aluminium foil
-5- Bake at 350 degrees Farenheit for 1.5 to 2 hours or until meat is tender.
-6- Serve over rice (but remember to keep portion size under control)
-7- Place all ingredients in a crockpot and cook on low setting for 6 to 7 hours.
Serving suggestions:
Serving size should not exceed one cup (including meat and rice). Ideally it should be 3/4 cup. Start your meal with a green salad to curb your appetite for rich foods.
