Wild Rice Tofu Dish
. Tofu is a great vegan source of calcium. Because it is loaded with isoflavones, tofu is being considered more and more, as a heart-friendly food. The FDA has now allowed soy products to be labeled with a message about the benefits of soy for the prevention of heart-related diseases.. Wild Rice is the only grain that is native to North America. It is an excellent source of fiber.
Ingredients:
- 1 cup of wild rice
- 4 cups of water or chicken/veggie broth
- 200 g of firm tofu (organic preferably)
- ½ cup of sun dried tomatoes
- 3 Tbs of soy sauce (reduced sodium)
- Grated parmesan cheese (optional)
Directions:
-1- Cut tofu in ½ inch cubes. Sprinkle with sun dried tomatoes, soy and parmesan. Let stand while you prepare the rest of the ingredients.
-2- Add 1 cup of wild rice to 4 cups of water or chicken/veggie broth. Bring to a boil. Once it starts boiling, reduce heat to medium-low and simmer for 50 minutes or until rice is tender.
-3- Once the wild rice is ready, drain if necessary. Put back in the skillet and add the tofu mix.
-4- Cook for 5 minutes on medium heat.
Enjoy!
Serves 4.
Serving suggestions:
This is a main dish for vegans but can also be served as a side dish with fish or poultry.
