Apple Curry Shrimp
. A very rich dish from the nutrients perspective!. Apples provide pectin (which creates a "full" feeling) and vitamin C.
. Shrimp provides necessary tissue-building proteins. Eating shrimps is an easy way to get your daily-recommended intake of zinc, copper, and selenium.
. The cream provides calcium.
Ingredients:
- 4 green apples (Granny-smith for instance), washed, unpeeled, cubed
- 2 pounds uncooked and peeled shrimp (frozen or fresh)
- 2 tablespoon non-hydrogenated margarine
- ½ cup of low fat heavy whipping cream
- 2 Tbs (or to taste) curry powder
- Salt and pepper to taste
Directions:
-1- Brown half of the apple cubes in the margarine until they are soft (at least 15 minutes at
medium heat). Set aside.
-2- Pour whipping cream in a deep skillet, sprinkle curry and add all the shrimp. Cook for 10
minutes at low-medium heat (longer for frozen shrimp), mixing constantly. Add some cream if
too dry.
-3- When the shrimp is almost cooked (after 10 minutes), add all the apple cubes (the cooked
and the uncooked).
-4- Cook for 2/3 minutes on medium heat.
Serve right away (this dish cannot wait) with brown rice or whole wheat pasta.
Variations:
You can replace green apples by Golden apples or even by pears.
Serving suggestions:
Eat right away. Does not re-heat very well.
