Cabbage Salad

Here is a nice, easy and fast way to get your daily intake of vitamin C.
Indeed, 84g of cabbage bring you 70% of your Vitamin C RDA.

Ingredients:

- 1 fresh cabbage
- Vegan mayonnaise (or the real thing if you insist)
- Balsamic vinegar
- Oregano

Directions:

Shred the cabbage head (remove outside leaves if necessary)
Rinse and spin water out.
In a salad bowl, add 2 tbs of vegan mayonnaise or the real thing and 3 tbs of balsamic vinegar.
Sprinkle with oregano.
Mix.
Enjoy!

Variations:

You can add raisins too! This will bring some iron to this already nutrient rich salad.
