Light Lemon Mousse

Lemon is a fruit that properly balances the pH in your body. It is an alkalinizing food, so make the most of it!

Ingredients:

Serves 4

- 3 lemons (organic preferably)
- 3 egg whites (organic, if possible)
- 1 cup non-fat Greek yogurt
- Unflavored gelatin (about 2 sachets)
- 2 oz confectioners sugar

Directions:

Dissolve the gelatin in cold water.

Rinse the lemons. Grate one of them and save the zest. Squeeze the other lemons, to get about 3 tablespoons of lemon juice.

In a bowl, combine the yogurt, lemon juice and zest.

In a small saucepan, heat 1 tablespoon of water and add the gelatin, stirring constantly. Remove from the heat and stir in the yogurt mixture.

In another bowl, beat the egg whites with a pinch of salt until foamy. Using a wooden spoon, gently fold the egg whites into the yogurt mixture.

Pour the mousse into 4 ramequins and refrigerate for a least 3 hours.
