Pink Cabbage Salad
This salad is full of beautiful colors, and is a healthy, raw dish!Raw cabbage is a very high source of Vitamin C. In fact, in on serving of this salad, you will ge t50% of your daily recommended allowance for Vitamin C!
Ingredients:
- 1/2 small cabbage, thinly sliced
- 1 ripe avocado (but not too ripe)
- 1 pink grapefruit (peeled and all white parts removed, cut into small cubes)
- 3 tsp Canola oil
- 2 tsp Balsamic vinegar
- 1 lemon (juice)
- Salt to taste
- Paprika
- Poppy seeds
Directions:
Place sliced cabbage at the bottom of the salad bowl
Add cut avocado on top of cabbage, followed by the pink grapefruit
Drizzle 3 teaspoons of canola oil (not olive oil – its flavor will be too strong for such a fine mix of textures and tastes)
Drizzle 2 teaspoons of balsamic vinegar
Add the juice of a small lemon
Sprinkle paprika
Sprinkle poppy seeds
Add salt to taste
